Everspace looks great, but it feels too narrow for me to get properly into: Fly, die, level, repeat. Empyrion was promising, but 10 hours in and I'd not yet got a sniff at the awesome looking ship builder. No Man's Sky lacked any sort of depth and ship customisation.
